A waffle straight from the iron sits under ice cream that immediately starts melting. The board deals with warmth from below and cold moisture from above.
A coated surface handles both. Uncoated board takes up melt quickly and the printed rim starts to look tired while the customer is still eating.

Through uncoated board within a few minutes, yes. A coated surface holds up for the length of a normal serve, which is why it is the standard specification for this tray.
